Quick Collards with Garlic & Lemon
Collard greens don't have to be complicated – this simple recipe turns them into a delicious side dish that pairs well with just about anything.

Ingredients
- 1 bag Collard Greens (360g)
- 1 bulb and stem green garlic (or 2 cloves dried garlic)
- Olive Oil
- Salt
- Lemon

What I love about this approach is how easy it is to customize based on what you’re in the mood for.
Feel like adding some depth? Toss in a few anchovies. Want a little heat? Fresh chili does the trick perfectly. Or if you’re looking for something heartier, chorizo brings a nice smoky flavor that really complements the greens. It’s one of those recipes that works exactly as written but also welcomes whatever creative touches you want to add.
- Remove the collard leaf from the stem(we won’t be using the stem in this recipe). Fold the leaf over on itself and slice finely to create thin strips.
- If using green garlic – mince the garlic bulk and slice the stem finely. If using dried garlic cloves then crush or mince them.
- Place your pan on medium high heat, add a glug of oil and heat until shimmering. Add in your collard greens and garlic stem if using, saute for 5 minutes before adding the crushed/minced garlic and saute for another 5 minutes.
- Season to taste and add a squeeze of lemon juice.
